    Abstract
    Spinach (Amaranthus sp.) is the second most consumed vegetable in Indonesia after water spinach. The demand for spinach is increasing but its productivity is decreasing due to limited chemical fertilizers and decreased land fertility due to the continuous use of inorganic fertilizers. This problem can be overcome by utilizing Jakaba Liquid Organic Fertilizer (POC) derived from household waste in the form of rice washing water and the use of superior varieties can be the right solution in increasing spinach plant productivity. The purpose of the study was to test the response of green spinach and red spinach to the concentration of POC Jakaba. The study was conducted in May-June 2024 at the USU Faculty of Agriculture research land at an altitude of ± 25 meters above sea level. The study used a Factorial Randomized Block Design with 2 Factors: Jakaba POC concentration with 5 levels, namely: 0%, 15%, 30%, 45%, 60% and spinach varieties: Green BA 287 and Red BA 285. The results showed that the concentration of Jakaba POC 45% significantly increased plant height and number of leaves 15-25 days after planting (dap), leaf area 14 and 21 dap, root length, plant wet weight, and dry weight of green spinach and red spinach plants compared to without the provision of Jakaba POC. Green spinach varieties clearly produced higher growth and production than red spinach. The interaction between the provision of Jakaba POC concentration and spinach varieties had no significant effect. It is recommended to use green spinach varieties and Jakaba POC with a concentration of 45%, but their growth and production have not reached the potential yield according to the variety description.
