    Abstract
    Sugarcane water is a type of snack drink made from sugarcane. In the processing process, it does not rule out the possibility of microorganism contamination, especially Escherichia coli, which can cause health problems such as diarrhea. This study aims to analysis of sanitary hygiene and Escherichia coli content in sugarcane water sold at Medan Selayang Sub-district in 2024. This type of research is a descriptive survey using a Cross-Sectional design. The sample in this study amounted to 6 traders using purposive sampling technique and the object to be tested was E. coli bacteria in the form of sugarcane water, ice cubes, and glass swabs. Data were collected through interviews, observations, and laboratory testing. The results showed that the process of processing sugarcane water in all traders did not meet health requirements (100%). The application of 6 principles of sanitary hygiene in all sugarcane water traders did not meet health requirements (100%). E. coli content was found in all sugarcane water (100%), all ice cubes (100%), and all glass swabs (100%) with the highest germ count of 68 MPN per 100 ml and the lowest of 1.1 MPN per 100 ml, not meeting health requirements. The level of knowledge of traders about the hygiene and sanitation of sugar cane water processing with a good category amounted to 1 trader (16.7%), a sufficient category amounted to 3 traders (50%), and a poor category amounted to 2 traders (33.3%). To avoid contamination, it is recommended that traders maintain personal hygiene in processing sugarcane water and use clean equipment and use a clean water source in the process of sanitizing equipment.
