    Abstract
    Fruit juice is a beverage derived from pureed or squeezed fruit. Juice is used as an alternative in increasing fruit consumption. However, fruit juice is susceptible to microbiological contamination, especially Escherichia coli. The purpose of this study was to analyze the hygiene sanitation of fruit juice sellers, determine the level of knowledge, attitudes, and actions of sellers, and determine the presence of Escherichia coli in fruit juice sold in Siantar Barat Subdistrict in 2024. This research is a descriptive survey research with a cross-sectional design to see the hygiene sanitation of sellers, the behavior of sellers related to sanitary hygiene, and laboratory tests to see the presence of Escherichia coli in water, ice, and fruit juice samples. The results showed that the food and beverage sanitation hygiene of all fruit juice sellers did not meet the requirements based on Permenkes Number 2 of 2023. A total of 13 traders (61.9%) had a good level of food sanitation hygiene knowledge. A total of 13 traders (61.9%) had a quite good attitude and as many as 13 traders (61.9%) had quite good actions related to food and beverage sanitation hygiene. E. coli examination of the samples showed that 2 fruit juice samples (33%) and 3 ice samples (50%) were contaminated with E. coli. There was no presence of E. coli in the water samples. It is recommended for sellers to improve the application of food hygiene sanitation in selling and maintain personal and equipment hygiene, and use masks while selling.
