The aim of this research is to evaluate the added value of income obtained by farmers as a result of downstream environmentally friendly persimmon (Diospyros kaki) fruit products in East Java. Primary and secondary data were collected from sample farmers in Malang Regency and cover various aspects of persimmon cultivation and downstream processes in Tulungagung Regency. The research results show that the downstream process of persimmon fruit can increase farmers' income. The income earned by farmers as a result of downstream products can be calculated by comparing income before and after the downstream process. By increasing the added value of farmers' income, it is hoped that the level of welfare of persimmon farmers will increase. To do this, the persimmon downstream strategy uses a SWOT analysis, which evaluates existing internal strengths and external opportunities, as well as internal weaknesses and external threats. Therefore, this research provides a complete picture of the sustainable and environmentally sound downstream process of persimmon fruit, as well as its potential to increase farmers' income in East Java. The results of this research can be a basis for the government and related institutions to create policies and programs that support this downstream process.
