Penentuan Kualitas Minyak Kanola (Canola Oil)

Abstract

Rapeseed oil (minyak lobak) adalah minyak yang diperoleh dari biji lobak yang biasanya diperdagangkan dengan nama minyak kanola (canola oil). Analisis Minyak Kanola tersebut didasarkan pada kadarasam parameter-parameter lemak bebas ( ALB ), bilangan iodin, kadar air dan warna. Hasil perbandingan menyimpulkan bahwa hasil analisis yang dilakukan untuk kadar Asam Lemak Bebas : pada sampel A1 (0,037), sampel A2 (0,041), sampel A3 (0,040), bilangan iodine : pada sampel A1 (112,13 grI2 / 100gr), sampel A2 (114,25 grI2 / 100gr), sampel A3 (110,10 grI2 / 100gr), kadar air : pada sampel A1 (0,018), sampel A2 (0,022), sampel A3 (0,017), warna : pada sampel A1 (1.1 Red/ 10 Yellow), sampel A2 (1.1 Red/ 11 Yellow), sampel A3 (1.1 Red/ 12 Yellow).

Rapeseed oil (rapeseed oil) is the oil derived from the seeds of radishare normally traded under the name of canola oil (canola oil). Canola Oil analysis is based on the parameters-parameters of free fatty acid (FFA), iodine, moisture content andcolor.The comparison concluded that the results of the analysis conducted for Free Fatty Acidlevels: on the sample A1(0.037), sample A2 (0.041), the sample A3(0,040), iodine number: the sample A1(112.13 grI2/100gr), sample A2(114.25 grI2/100gr), the sample A3(110.10 grI2/100gr), water content: the sample A1(0.018), sample A2(0.022), the sample A3(0,017), color: the sample A1(1.1 Red/10Yellow), sample A2(1.1 Red/Yellow11), the sample A3(1.1 Red/Yellow12).
