Microencapsulation research using matrix from starch of palm stem-chitosan with glutaraldehyde crosslinked to maintain the chemical components contained in the core material of bungle rhizome essential oil (Zingiber cassumunar Roxb) with different variations through spray drying method. The results of GC-MS analysis of bungle rhizome essential oil (Z. cassumunar Roxb), chromatograms were obtained with 50 peaks and varied area percentages. The peaks indicated the type of chemical component in essential oil of the bungle rhizome (Z. cassumunar Roxb). From the chromatograms, there were 7 main chemical components with the highest peak, namely at a retention time of 5,239 minutes and an area percentage of 26.23% has found Cyclopentene, 3-isopropenyl-5.5-dimethyl-. The second highest peak at the retention time was 8,644 minutes and the area percentage was 25.22 % has detected 3-cyclohexen-1-ol, 4-methyl-1- (1-methylethyl). The third highest peak at the retention time of 18,445 minutes and an area percentage of 12.51% was found Triquinacene, 1,4-bis (methoxy). The fourth highest peak at a retention time of 6,030 minutes and an area percentage of 5.17% was found o-Cymene. The fifth highest peak at 6,594 minutes retention time and the percentage of area of 4.00% was found Gamma-terpinene. The sixth highest peak at a retention time of 15,741 minutes and an area percentage of 3.84% found Cyclohexene, 3- (1,5-dimethyl-4-hexenyl) -6. The seventh highest peak at a retention time of 5,306 minutes and an area percentage of 3.02% was found in the Beta-Pinene. The results of distillation of bungle rhizome essential oil (Zingiber Cassumunar Roxb) with a yield of 0.53%. The results of extraction of oil palm starch from oil palm powder 2.0% yield with water content 0.29%, ash content 0.94%, protein content 3.31%, fat content 2.30%, crude fiber content 65,87%, Characterization of chitosan with 10% water content, 1.5% ash content, deacetylation degree 80.35% and 20% yield. Microencapsulation efficiency 97.61%, moisture content 0.1% and average particle size 19.72 μm .en_US
