    Hasil Uji Organoleptik dan Komposisi Kimia Nugget Ayam Petelur Afkir dengan Menggunakan Andaliman (Zanthoxylun acanthopodium)

    Abstract
    This study aims to determine the organoleptic test and chemical quality of laying hens nuggets with addition of andaliman (Zanthoxylun acanthopodium). This research method uses a completely randomized design with the addition of andaliman with 5 teatments namely P0=0%, P1=0,5%, P2=1%, P3=1,5%, P4=2% and with 4 replications the dose of andalimanaddition. The measured variables include water content, protein content, and fat content of fresh nuggets. Organoleptic tests measured included calor, taste, aroma, texture, and likeness. The results showed in the chemical test the use of andaliman on nuggets with a level of 1,5% produced the highest protein content, the lowes fat content and the lowest water content. In the organoleptic test results in high taste and likenessscores.
     
    Penelitian ini bertujuan untuk mengetahui Hasil Uji Organoleptik dan Kualitas Komposisi Kimia dari Nugget Ayam Petelur Afkir dengan Penambahan Andaliman (Zanthoxylun acanthopodium). Metode penelitian ini menggunakan rancangan acak lengkap (RAL) dosis penambahan andaliman dengan 5 perlakuan yaitu P0=0%, P1=0,5%, P2=1%, P3=1,5%, dan P4=2% dengan 4 ulangan dosis penambahan andaliman. Variabel yang diukur meliputi kadar air, kadar protein, dan kadar lemak dari nugget segar. Uji organoleptik yang diukur meliputi warna, rasa, aroma, tekstur dan uji kesukaan. Hasil penelitian menunjukkan pada uji kimia penggunaan andaliman pada nugget dengan level 1,5% menghasilkan kandungan protein tertinggi, kandungan lemak rendah dan kandungan air rendah. Pada uji organoleptik menghasilkan skor rasa dan kesukaan yang tinggi
