    Analisis Nilai Tambah Kopi Arabika Semi Wash, Full Wash, Natural Process, dan Honey Process di Desa Aek Sabaon, Kecamatan Marancar, Kabupaten Tapanuli Selatan (Studi Kasus: Usaha Tyyana Coffee)

    Abstract
    The purpose of the study is to analyze the added value and comparative income of processing Arabica coffee cherries in postharvest semi wash, full wash, natural processed and honey processed variants in the Tyyana Coffee, Kecamatan Marancar, Kabupaten Tapanuli Selatan. Tyyana Coffee is an agricultural business unit that processes its own production. Marancar has 1 hectare of Arabica coffee plant and has its own coffee bean processing area. The analysis method used in this research is Hayami method and income analysis. There is a high radded value derived from processing Arabica red cherries into coffee powder through a semi wash, full wash, natural processed, and honey processed in the Tyyana Coffee (>50%). The highest added value ratio in the natural process is 79,58% and the highest labor contribution ratio in the full wash process is 34,80%, and there is a comparison of income between post-harvest processing process with the highest income is in the natural process.
     
    Penelitian ini bertujuan untuk menganalisis besar nilai tambah (value added) dan komparasi pendapatan dari pengolahan buah kopi arabika pada varian pascapanen semi wash, full wash, natural process dan honey process di usaha Tyyana Coffee Desa Aek Sabaon, Kecamatan Marancar, Kabupaten Tapanuli Selatan. Lokasi penelitian dipilih secara sengaja dengan pertimbangan karena Tyyana Coffee merupakan unit usaha pertanian yang mengolah langsung hasil pertaniannya sendiri, dimana usaha ini memiliki lahan komoditi kopi jenis arabika seluas 1 Ha tepat di sekitaran tempat pengolahan biji kopi. Analisis data dilakukan dengan menggunakan metode Hayami dan analisis pendapatan. Hasil penelitian diperoleh bahwa nilai tambah yang diperoleh dari pengolahan red cherry Arabika menjadi kopi bubuk melalui proses semi wash,full wash, natural process, dan honey process di industri pengolahan Tyyana Coffee tergolong tinggi (>50%). Rasio nilai tambah tertinggi adalah pada natural process sebesar 79,58% dan rasio sumbangan tenaga kerja tertinggi adalah pada proses full wash sebesar 34,80%, serta terdapat komparasi pendapatan antar proses olahan pasca panen dengan pendapatan tertinggi adalah pada natural process.
