    Pembuatan Shortening yang Mengandung C12-C18 Melalui Reaksi Gliserolisis terhadap Campuran Minyak Inti Sawit dan Stearin

    Abstract
    The preparation shortening was conducted by simultaneously glycerolysis and interesterification process of the mixture of palm kernel oil and stearin RBD by stearing on 3500 rpm using sodium methoxide as katalyze. In order to obtain the products that fullfill the standard spesification of the shortening, then, the solid fat content, melting point, monoglycerides content, and the HLB of the products were determined. The shortening produced from the mixture of palm kernel oil and stearin RBD and glycerol in the mole ratio of 0,5:0,5:4, 1:1:4, 1,5:1,5:4, and 2:2:4, the solid fat content at 40°C was 4,90, 5,30, 5,70 and 6,15%, respectively; and the melting point was 41,0, 41,3, 42,0 and 43,5°C, respectively; and the monoglycerides content was 6,45, 9,48, 8,40 and 5,50%, respectively; and the HLB value was 3,61, 3,18, 3,20 and 3,30, respectively. Based on the criteria of shortening, the product that fullfill the criteria of shortening was the product that prepared from the mixture of palm kernel oil, stearin RBD and glycerol at the mole ratio of 1:1:4.
     
    Pembuatan shortening dilakukan secara simultan dari proses gliserolisis dan interesterifikasi dari campuran minyak inti sawit dan RBD stearin dengan pengadukan pada kecepatan 3500 rpm menggunakan katalis natrium metoksida. Untuk mendapatkan shortening yang memenuhi standar mutu maka dilakukan analisis kandungan lemak padat, pengukuran titik cair, penentuan kandungan monogliserida yang terbentuk dan penentuan harga HLB. Shortening yang dihasilkan dari campuran minyak inti sawit dan RBD stearin dan gliserol dengan rasio mol 0,5:0,5:4, 1:1:4, 1,5:1,5:4, dan 2:2:4, diperoteh kandungan lemak padat pada suhu 40°C masing-masing 4,90, 5,30, 5,70, dan 6,15%; dan titik cair 41,0, 41,3, 42,0, dan 43,5°C; dan kandungan monogliserida masing-masing 6,45, 9,48, 8,40, dan 5,50%; dan harga HLB masing-masing 3,61, 3,18, 3,20, dan 3,30. Berdasarkan persyaratan shortening maka produk yang diperoleh yang memenuhi persyaratan adalah produk yang dibuat dari campuran minyak inti sawit, RBD stearin dan gliserol adalah pada rasio mol 1:1:4.
