Meat is an important food ingredient and meets nutritional needs. According to the Indonesian National Standard (SNI) No. 3932:2008, the maximum limit of Escherichia coli contamination in beef is 1x101 CFU / g. Based on the magnitude of the risk caused by Escherichia coli infection, it is necessary to conduct research to detect whether there is E.coli bacterial contamination in beef sold in traditional markets in Medan City.The number of markets that became research sites was 9 markets, namely Sei Kambing, Helvetia, Lalang Village, Padang Bulan, Market Center, Petisah, Kwala Bkala, Kampung Baru and Kemiri as well as a total sample of 22 beef samples. This research was conducted in November 2020 - February 2021 using the method according to the SNI 2897: 2008 reference regarding testing the number of microbial contaminants and SNI 3932: 2008 concerning the microbiological quality requirements of beef in traditional markets in Medan City. The results of this study indicated that 22 samples of 100% beef had exceeded the maximum limit of microbial contamination, namely the highest number of microbial bacteria was 7x105CFU / g and the lowest was 1x103 CFU / g. Based on the results of the study, it can be concluded that the beef in the Medan Traditional Market based on the microbiological quality requirements of beef according to SNI 3932: 2008 which is 1x101 CFU/g has exceeded the maximum limit of microbial contamination (BMCM) and does not meet SNI standards. Daging merupakan bahan pangan yang penting dan memenuhi kebutuhan gizi. Menurut Standar Nasional Indonesia (SNI) Nomor 3932:2008 batas maksimum cemaran bakteri Escherichia coli pada daging sapi yaitu 1x101 CFU/g. Berdasarkan besarnya resiko yang disebabkan oleh infeksi Escherichia coli maka perlu dilakukan penelitian untuk mendeteksi ada tidaknya cemaran bakteri E.coli pada daging sapi yang dijual di Pasar Tradisional diKota Medan. Adapun jumlah pasar yang jadi tempat penelitian sebanyak 9 pasar yaitu Sei Kambing, Helvetia, Kampung Lalang, Padang Bulan, Pusat Pasar, Petisah, Kwala Bkala, Kampung Baru dan Kemiriserta jumlah sampel sebanyak 22 sampel daging sapi. Penelitian ini dilaksanakan pada bulan November 2020 – Februari 2021 dengan menggunakan metode sesuai acuan SNI 2897:2008 tentang pengujian jumlah cemaran mikroba dan SNI 3932 : 2008 tentang syarat mutu mikrobiologis daging sapidi Pasar Tradisional diKota Medan. Hasil Penelitian inimenunjukkan bahwa 22 sampel daging sapi(100%). telah melebihi batas maksimum cemaran mikroba yaitu dengan jumlah bakteri mikroba tertinggi 7x105 CFU/g dan yang terendah 1x103 CFU/g. Berdasarkan hasil penelitian dapatdisimpulkan bahwa daging sapi yang ada di Pasar Tradisional kota Medan berdasarkan syarat mutu mikrobiologis pada daging sapi menurut SNI 3932 : 2008 yaitu 1x101 CFU/g telah melebihi batas maksimum cemaran mikroba (BMCM) dan tidak memenuhi standar SNI.
