    Analisis Mutu dan Keamanan Pangan Produk Terasi Udang Rebon (Acetes indicus) Asal Kecamatan Tanjung Balai Provinsi Sumatera Utara

    Abstract
    Shrimp paste is a traditional fishery product that is often found in almost all parts of Southeast Asia made from rebon shrimp or small fish through a fermentation process. Tanjung Balai District has been known as one of the areas producing shrimp paste products in Asahan Regency, North Sumatra Province. This research was conducted in November- January 2021-2022. The purpose of this study was to analyze the quality and safety of shrimp paste products from Tanjung Balai District, North Sumatra province physically, chemically, and microbiologically based on the conformity of shrimp paste quality standards. The method used to determine the station in this research is purposive sampling with the selection of locations for sampling shrimp paste is determined intentionally, namely at 3 (three) shrimp paste processing sites located in Tanjung Balai District, Asahan Regency, North Sumatra Province. The results of this study indicate that physically based on organoleptic values 6-7. Chemically, such as water content 33.29-37.67%, ash content 22.39-28.99%, protein content 33.37-39.91%, fat content 0.57-0.67%, and salt content 7,25-7.26%. Microbiologically, such as negative Escherichia coli, testing for Salmonella sp is negative.
     
    Terasi merupakan produk olahan perikanan secara tradisional yang banyak dijumpai hampir di seluruh wilayah Asia Tenggara yang dibuat dari bahan baku udang rebon atau ikan kecil melalui proses fermentasi. Kecamatan Tanjung Balai selama ini dikenal sebagai salah satu daerah penghasil produk terasi di Kabupaten Asahan Provinsi Sumatera Utara. Penelitian ini telah dilakukan pada bulan November hingga Januari 2021-2022. Tujuan dari penelitian ini adalah menganalisis mutu dan keamanan produk terasi udang rebon asal Kecamatan Tanjung Balai provinsi Sumatera Utara secara fisik, kimia, dan mikrobiologis berdasarkan kesesuaian standar mutu terasi. Metode yang digunakan untuk penentuan stasiun dalam penelitian ini adalah purposive sampling dengan pemilihan lokasi pengambilan sampel terasi udang ditentukan secara sengaja yakni pada 3 (tiga) tempat pengolah terasi udang rebon yang terdapat pada Kecamatan Tanjung Balai Kabupaten Asahan, Provinsi Sumatera Utara. Hasil penelitian ini menunjukkan bahwa secara fisik berdasarkan nilai organoleptik 6-7. Secara kimia seperti kadar air 33,29-37,67%, kadar abu 22,39-28,99%, kadar protein 33,37-39,91%, kadar lemak 0,57-0,67%, dan kadar garam 7,25-7,26%. Secara Mikrobiologi seperti Escherichia coli negatif, pengujian Salmonella sp negatif.
