    Abstract
    Nuggets of milkfish (Chanos chanos) is one of the fishery products that have high economic value and are in great demand by the community. But there is still a lack of information about proper storage, be it freezing temperature, cold temperature or room temperature, therefore proper handling is needed to maintain quality. Product quality and safety requirements are one of the things that should be considered because it concerns consumer safety when consuming the product. The purpose of this study is to find out the quality and durability of milkfish nugget products at different times and temperatures according to SNI 7758: 2013. This study was conducted from January 17, 2022 to January 26, 2022. The results showed the quality of milkfish raw materials (Chanos chanos) namely physical (organoleptic 8.0), chemical (formalin levels 0%), microbiology (TPC 2.0 x 105 colonies / gram) and the quality in milkfish nugget products, namely physical (organoleptic ranging from 9.0-3.0), chemistry (protein levels ranged from 5.11% - 7.19%, fat levels ranged from 2.20 -14.51%, water content ranged between 37.86% - 56.54%), microbiology (TPC ranges between 3.2 – 42.8 x10 4 colonies / grams) be it frozen storage, cold and space and everything in accordance with the quality standard value set by SNI 7758: 2013.
     
    Nugget ikan bandeng (Chanos chanos) merupakan salah satu produk perikanan yang memiliki nilai ekonomi tinggi serta banyak diminati oleh masyarakat. Namun masih minimnya informasi tentang penyimpanan yang tepat, baik itu suhu beku, suhu dingin atau suhu ruang maka dari itu diperlukan penanganan yang tepat untuk mempertahankan kualitas. Persyaratan mutu dan keamanan produk adalah salah satu hal yang patut diperhatikan karena menyangkut keselamatan konsumen apabila mengkonsumsi produk tersebut. Tujuan dari penelitian ini untuk mengetahui mutu dan daya awet pada produk nugget ikan bandeng pada waktu dan suhu berbeda sesuai SNI 7758:2013. Penelitian ini dilaksanakan pada 17 Januari 2022 sampai 26 Januari 2022. Hasil penelitian menunjukkan mutu bahan baku ikan bandeng (Chanos chanos) yaitu fisik (organoleptik 8,0), kimiawi (kadar formalin 0%), mikrobiologi (ALT 2,0 x 105 koloni/gram) dan mutu pada produk nugget ikan bandeng yaitu fisik (organoleptik berkisar 9,0-3,0), kimiawi (kadar protein berkisar 5,11% - 7,19%, kadar lemak berkisar antara 2,20 -14,51%, kadar air berkisar antara 37,86% - 56,54%), mikrobiologi (ALT berkisar antara 3,2 – 42,8 x10 4 koloni/gram) baik itu penyimpanan beku,dingin dan ruang dan semuanya sesuai dengan nilai baku mutu yang ditetapkan SNI 7758:2013.
