The aim of this research was to determine the
effect of the addition of water and various extractions method on the chemico-physic properties of
water-soluble polysaccharide. This study used a completely randomized design (CRD) with two
factors i.e. the addition of water (0,5 part, 1 part, 1,5 part and 2 part) and extraction method
(water, yeast and mold). Observed parameters were moisture content, protein content, fiber
content, yield, glucose content, reducing sugars, total sugars, viscosity, dextrose equivalent,
polymerization degree, soluble ability and form of granule of PLA yam bean.
The results showed that the addition of water had highly significant effect on moisture
content, protein content, fiber content, yield, glucose content, reducing sugars, total sugars,
viscosity, dextrose equivalent, polymerization degree and soluble ability PLA. The extraction
method had highly significant effect on moisture content, protein content, fiber content, yield,
glucose content, reducing sugars, total sugars, viscosity and soluble ability PLA and had
significant efffect on dextrose equivalent and polymerization degree PLA. Interaction of the
addition of water and extraction method had significant effect on moisture content PLA and had
no significant effect on protein content, fiber content, yield, glucose content, reducing sugars, total
sugars, viscosity, dextrose equivalent, polymerization degree and soluble ability PLA.
