Products of palm oli factory are Crude Palm Oil (CPO) and Palm Kernel Oil
(PKO). Palm kernel oil contains fat, protein, fiber, and water. The palm kernel
contains, however are still containing numbers of other component that effect its
quality. Several of parameter that used in analising the quality of palm kernel is water
and free fatty acid (FFA) contains. Those parameter is really important to be
analysed because in hight concentration it will result the strange odor and oxidase
easier. Therefore, to stabilize the quality of palm kernel contains. so,we do the analyse
that based on the used of parameter which used with titrimetri method alkalimetri, for
the concentration of free fatty acid (FFA) and Gravimetri method for the concentration
of water.From the analysis we did, the concentration of water and free fatty acid(FFA)
in palm kernel contains from 20 until 28 January 2010 are on the otherhand, the
standar water 5,56 until 6,51 % and free fatty acid (FFA) is 0,55 until 0,85 %. The
sandart of water and free fatty acid (FFA) in palm kernel contains at PTP.Nusantara
III Sei Mangkei are maks. 7,00 % and1,00 %.So, from the experiment, the
concentration of water and FFA in palm kernel contains still meets the quality standart
of export in PTP.Nusantara III Sei Mangkei.
