One of the major analysis conditions to decide that a commodity is free from quarantine infections and illnesses is from parasites analysis such as bacteria. This analysis is done to keep the commodity in meeting standards in consumption or nonconsumption. To know that the bacteria in commodity are included as parasites or not, firstly they should be identified to know the species where the principle is based on its metabolism to certain kinds of chemical substances. As for anti-microbial index testing is done to know the effectiveness of curing techniques which is applied by many people to preserve fish commodity especially Lele Dumbo Catfish (Clarias sp). This testing was done by placing a disc containing liquefied smoke to the bacteria cultures in Tryptone Soya Agar media, and continued with counting the prevention zone diameters. From the analysis can be get as result from bacteria isolation and identification from Lele Dumbo Catfish meat is Aeromonas sp, Pseudomonas sp and Clostiridium sp while for the result of anti-microbial index of liquefied coconut shell smoke is 5 for Aeromonas sp, 3 for Pseudomonas sp and 1.25 for Clostiridium sp.
