dc.description.abstractNitrit is an additive that is used as preservative according to the provision’s of national Standart Indonesia (SNI-01-3820-195) use of nitrit in meat has a maximum dosed of 125 mg/kg .purpose of this study was to determine the supermarket are from the Medan city. Sample that in the analysis are the three sausage products with different brands of supermarket location in the Medan city . Nitrit essay performed visible spectrofotometri using a color reagent N-( 1-napthyl)ethylene diamine dihydroclorida at a wave length 0f 570 nm maximum. The results ware obtained sample A with expiredon 26 May 2012 had higher levels of nitrit 0,72 mg/kg where as in sample B expired 0n 19 May 2012 had hinger levels of nitrit and 0,38 mg/kg in sample C to expired on 13 May 2012 had higher levels of nitrit 0,28 mg/kgen_US
