dc.description.abstractBy SNI, sweetened condensed milk is fresh milk that the water contest is resduced using a warming of at least 100oC. Added sugar sucrose or sucrose sugar mixture and desktroksa the evaporated some of the water so thick. The sample used in the test is sweetened condensed milk packaging as much as three sachets. Protein assay was perfomed according to the method in accordance with the procedure kjedahl Indonesian National Standard (SNI) and tools for kjedahl method used in Food and Beverage Laboratories Agricultural research centers and standardization (Baristand) Industrial Field. The result showed that the sweetened condensed milk containing A examined protein content of 2,78%. Sweetened condensed milk B 1,70% and sweetened condensed milk C 3,57%. This result did not reach the minimum threshold levels of protein contained in the SNI 01 – 2971 – 1998, ie at least 6,5%.
