A study on thedetermination free fatty acid contents and iodine number of
the Belawan bulk oil samples has been carried out in Balai Pengawasan dan
Identifikasi Barang Tipe-B Belawan. The determinations were conducted by using
volumetric titration in which phenolphthalein was used as indicator and wijs
solution as a reagent. The initial identification of the oil was conducted by using
FT-IR.
The spectrum of FTIR show that the bulk sample is belong to the group of
RBD Palm Olein. The result obtained show that the fatty acids contents in the
sample were consist of 0,2280% oleic acid, 0,1617% lauric acid and 0,2070%
palmitic acid. The iodine number was shown to be 22,2274%. Free fatty acids
contained in the sample bulk cooking oil Belawan meet the Standar Nasional
Indonesia is not more than 0.3%. While iodine Numbers of samples did not meet
the Indonesian National Standard I2/100 45-46 gr gr sample, (SNI - 3741-1995).
