dc.description.abstractThe determination triasilgliserol has been made on the CBE from RBDPO and stearic acid using rice bran enzyme catalyst. Cocoa Butter Equivalent (CBE) is a brown fat that has physical properties similar to Cocoa Butter. Making CBE performed by mixing ratio RBDPO and stearic acid with some comparison is 1:1; 1:2,3; 1:3; 1:4; 1:5,6; 2:1 and 3:1 with the addition of rice bran enzyme. Determination of the composition of TAG using Gas Chromatography. Obtained Cocoa Butter Equivalent (CBE) is good at the ratio of 1:4. Where the results of the analysis of the target TAG CBE between RBDPO and stearic acid obtained POP= 26,61%, POS = 8.2%, SOS = 0.66% which is closer to CBE standard.en_US
