It has been the Free Fatty Acids( FFA) and β- karotene in fruit fractions of raw fractions
in Pusat Penelitian Kelapa Sawit. Determination of free fatty acids performed in the method of
titration alkalimetri by using KOH 0,1043 N and Phenolphtalein as indicator at temperature ±
45ºC. Result shared that the FFA of Raw fractions = 2,1517% and carotene was tested using a
spectrophotometer and carried uot during fourth day. The value of carotene is the most massive
on the fourth day of 345,3652 ppm. ALB dan Karoten obtained in the oil palm fruit fractions of
raw center for oil palm research is in accordance with number SNI : 01-0024-1987
