Abstract
Determination of water content of olive oil at PT.PALMCOCO
LABORATORIUM MEDAN has been done sampling done for three
diffrent types of olive oil are olive oil of bertolli brand, olive oil of Rs
brand, and olive oil of Ravika brand, derived from Pondok Buah
Swalayan, jalan Setia Budi, Medan. The field of water content
determination is done with the analysis by heating in the oven at 105-
110˚C for 3 hours, then cooled in desiccator for 30 minutes and
counted the reduced weight. From the analysis results obtained water
content in olive oil for olive oil samples Bertolli 0.063%, olive oil
sample 0,068%, olive oil samples Ravika 0,053%. Conclusion is
obtained that the analyzed olive oil has met the international quality
standart that is ≤ 0,2%.
