dc.description.abstract | Chitosan is the result of deacetylation of chitin produced from crab shells sea
isolation. Chitin extraction stage includes the demineralization with 1 M HCl
aimed at the removal of minerals contained in crab shells sea and deproteinasi
with NaOH 3.5%, which aims to eliminate the protein. The transformation of
chitin into chitosan is done by means of deacetylation with NaOH 50% aiming to
decide an acetyl group. From the results of research conducted in the
characterization obtained as follows: the yield of the transformation of the shell
kepingting to demineralization phase was 25,4695 %, of demineralization stages
toward chitin is 61.1116%, and from chitin into chitosan is 90,84 %, water content
which obtained 6.76%, solubility chitin and chitosan in acetic acid 10% by
respectively 12.3% and 0.17%, floured texture, degree of deacetylation chitosan
with FTIR method is 99 .006%. Mineral analysis using AAS with a comparison
between the shells of crab and results of demineralization by sequence on Ca
(5.22%: <0,001 ppm), Mg (1.01%: 0.003%), Na (15.98%: 0.08% ), Zn (14.54
ppm: 9.28 ppm), Cu (3.04 ppm: 2.42 ppm), Fe (256.55 ppm: 38.78 ppm). Volume
protein analysis method by comparison shells of crab, the results of
demineralization and with chitin from deproteinasi results are respectively
13.08%, 43.33% and 39.61%. | en_US |
