Papaya seed it is a waste product from home industry. Commonly, papaya seed used to be a new plant to grow. Papaya seed have a potential as a edible oil. Soxhlet is used to obtain the oil from papaya seed by using several solvent such as: petroleum ether, methanol and n-hexane. In this research, papaya seed as raw material by using a solvent n-butyl acetate. The variables studied were the time of extraction and the ratio papaya seed to solvent . The results showed that the highest fatty acid com position of papaya seed oil was oleic acid 63,22% and followed by lauric acid 17,57%. Iodine value of date seed oil was 16,91 mg / g. Peroxide value of papaya seed oil not definition. Specific gravity of papaya seed oil was 0,8393. Free fatty acid content of papaya seed oil was 5,6410%. The highest oil content obtained in the extraction time 220 minutes with the ratio papaya seed to solvent = 1 : 8. The oil content was obtained 43%,. From the result at this research showed that papaya seed oil was not fulfilled standard for the edible oil.en_US
