dc.description.abstractChrysanthemum flower is one of the decorative flowers that can be used as an edible flower. In Raya Berastagi Village, there are 11 chrysanthemum cultivars that are sold as decorative flowers, but many are wasted due to low demand. The use of chrysanthemum flowers as raw materials for processed food with physicochemical content and antioxidant activity which are beneficial to health is expected to be an added value and a solution to wasting chrysanthemum flowers. This study was aimed to determine the physicochemical characteristics and antioxidant activity of 11 chrysanthemum cultivars with different harvest stage. This study used a randomized block design (RBD) method with two factors, namely chrysanthemum cultivars (K): K1=yellow chrysanthemum, K2=white chrysanthemum, K3=bandung chrysanthemum, K4=pink chrysanthemum, K5=purple chrysanthemum, K6=pipok chrysanthemum white, K7=brick chrysanthemum, K8=green ball chrysanthemum, K9= batik chrysanthemum, K10=white chrysanthemum, K11=white single chrysanthemum and harvest age (U): U1=half bloom and U2=full bloom. The parameters analyzed were water content, total phenols, total flavonoids, anthocyanins, beta-carotene and antioxidant activity (IC50). The results of the research analysis showed that the 11 cultivars of chrysanthemum flowers had highly significant (P<0,01) effects on water content, total phenols, total flavonoids, anthocyanins, beta-carotene and antioxidant activity (IC50). The harvesting age treatment had a highly significant (P<0,01) effect on water content, total phenols, total flavonoids, anthocyanins and beta-carotene. But had no different effect (P>0,05) on antioxidant activity (IC50). The interaction between 11 cultivars of chrysanthemum and the age of harvest had a highly significant effect (P<0,01) on total phenol, anthocyanin, beta-carotene and antioxidant activity (IC50). The best treatment of 11 chrysanthemum cultivars with different harvest stage was batik chrysanthemum (K9) with U1 harvesting age (half bloom).en_US
