    Abstract
    Freshwater mussel (Pilsbryoconcha exilis) is a filter feeder animal that has a habit of eating by filtering food in the water, inorganic contaminants such as the heavy metal copper (Cu) also accumulate in the body of the mussel. Therefore, freshwater mussel meat has a high potential to be contaminated with the heavy metal copper (Cu), and mussels that contain high heavy metals if consumed can poison the human body. One type of seaweed that can absorb heavy metals is Eucheuma cottonii. Eucheuma cottonii can reduce heavy metal levels because it contains chemicals such as carrageenan, protein, carbohydrates, fat, crude fiber, water, and ash. Keraginans are sulfated polysaccharides containing hydroxyl groups (-OH) and carboxyl groups (-COOH), and are active sites where a metal interacts in seaweed. This study aimed to determine the best effect of extract concentration and soaking time using seaweed extract in reducing copper (Cu) levels in mussel meat. This study used a factorial completely randomized design (CRD) model with extract concentrations of 6%, 10%, and 14% with immersion times of 45 minutes, 90 minutes, and 135 minutes. The results showed that the extract concentration of 14% with a long soaking time of 135 minutes using seaweed extract showed the highest reduction in copper (Cu) levels of 87.10% and the lowest decrease in copper (Cu) metal content at a concentration of 6% with a soaking time of 45 minutes 29.68%.
