    Karakteristik Fisik dan Kimia Tepung Cangkang Kijing Taiwan (Anodonta woodiana) pada Habitat Berbeda di Desa Asam Jawa, Kecamatan Torgamba, Kabupaten Labuhanbatu Selatan, Provinsi Sumatera Utara

    Abstract
    The Chinese Pond Mussel (Anodonta woodiana) is a type of freshwater clam that is found in the waters of the Barumun River and this animal's aquatic habitat belongs to the Pelecypoda class, family Unionidae. The people of Asam Jawa Village use the Chinese Pond Mussel (Anodonta woodiana) as one of the freshwater mussels which is used for meat consumption, while the shells are simply thrown away resulting in accumulation of mussel shell waste because it has not been utilized optimally. Sampling was carried out in the Barumun River and Samak Reservoir habitats by repeating 3 times at different points in each habitat. Samples were collected as many as 97 individuals at each point. Furthermore, the process of cleaning and data collection of physical parameters through morphometrics of mussels including measurements of length, width, thickness, total weight, and shell weight. The highest morphometric calculations were obtained in river habitats. Then proceed with the separation between the meat and the shells to measure the yield of the shells, then the process of drying the shells and boiling the shells is then continued with the milling process using a bale mill. From the results of the yield calculation, it is in the range of 0.32%- 0.49%. Furthermore, chemical analysis was carried out by testing the water content, ash content, chitin, protein, phosphorus, calcium, magnesium, fat and degree of acidity. The results of testing the ash content in river and lake habitats ranged from 93.20%-95.30%. The water content is in the range of 0.05%-0.75%. Protein levels ranged from 1.04%(w/w)-1.69%(w/w). Chitin levels ranged from 0.926%-0.936%. Phosphorus levels range from 17.1 mg/kg-81.03 mg/kg. Calcium levels ranged from 0.06%(w/w)- 0.08%(w/w). Magnesium levels ranged from 41.40 mg/kg-65.40 mg/kg. The fat content ranges from 0.29 mg/kg-3.67 mg/kg and the degree of acidity ranges from 8.2%-8.9%.
