dc.description.abstract | Research on drying snakehead fish using a closed cycle heat pump is based on the ease of damage to the albumin protein in snakehead fish when exposed to heat. Therefore, to obtain albumin powder from snakehead fish, drying at a relatively low temperature is required. Heat pumps with a vapor compression cycle are able to absorb heat at lower temperatures and release it at higher temperatures. Apart from increasing the temperature, this heat pump can also reduce the humidity of the air used in the drying process and have an optimal drying level. The main components of this heat pump include the compressor, condenser, evaporator, and expansion valve. The aim of this research is to design and build a snakehead fish dryer using a closed cycle heat pump with a drying capacity of 5 kg. Assuming a drying efficiency of 27%, the amount of heat required to dry 5 kg of snakehead fish is around 35100 kJ. Requires compressor work of 1.36 kW (AC 2 PK), and air output at a temperature of 45°C and humidity of 25.8%. The drying rack has dimensions of 65 cm x 65 cm which consists of 2 levels and the dimensions of the drying room are 170 cm x 170 cm x 170 cm | en_US |
