    Abstract
    Collagen on the market is generally made from pig or cow skin, which raises concerns both in terms of religion and health. Therefore, it is necessary to find alternative raw materials that can be accepted by the whole community. One of the raw materials that can be used as a substitute is fish. Tropical Cat Fish (Hemibagrus sp.) is a freshwater endemic fish that can be found in North Sumatra, one of which is in North Labuhanbatu Regency. As one of the leading commodities in North Labuhanbatu Regency, the utilisation of Tropical Cat Fish is still limited, which causes fishery waste including fish skin. The purpose of this study was to characterise the collagen of the skin of Tropical Cat Fish (Hemibagrus sp.) from Kualuh Hilir District, Labuhanbatu Utara Regency physically and chemically. The results showed physical characteristics of yield of 0.92%, degree of whiteness of 66.42% with L,a,b values of 70.34, -4.48, 14.72. Morphological results using SEM showed the presence of pores and had non-uniform fibre size and shape, and there were white fibres indicating crosslinking. Fish skin collagen has chemical characteristics of protein content of 10.16%, fat 8.73%, and water 6.28%, and acidity (pH) 4.32. The results of FTIR functional group analysis were obtained in the typical absorption region of collagen, namely Amide A (3431.36 cm-1), Amide B (2927.94 cm-1), Amide I (1641.42 cm-1), II (1450.47 cm-1), and III (1244.09 cm-1). The low value of Amide II band is due to the damage or loss of CN and/or NH functional groups. The collagen of Tropical Cat Fish’s skin (Hemibagrus sp.) has an IR value of 1.168 and a secondary protein structure of β-sheet.
