Background: Tea is a drink that is liked and consumed by many people as a refreshing and healthy drink. Tea products can be produced from star fruit, cinnamon bark and ginger rhizomes. The combination of the three can be used as herbal tea because it consists of plants that have medicinal properties. As a product that is directly consumed, it must meet the requirements for pharmaceutical products in accordance with applicable regulations. Simplicia standardization is nothing more than fulfilling the requirements as an ingredient by determining the values of various product parameters. Objective: This research aims to determine the quality characteristics of the herbal tea simplicia of ginger, cinnamon bark and starfruit. Method: Quality Characterization was carried out at the Phytochemical Laboratory, Faculty of Pharmacy, University of North Sumatra. Macroscopic test observations were carried out, water content determination, total ash content determination, acid insoluble ash content determination, water soluble essence content determination and ethanol gum essence content determination. Results: The results showed that in ginger the water content of ginger simplicia was 9.32%, the total ash content was 6.44%, the acid insoluble ash content was 0.54%, the water soluble extract content was 27.08%, the ethanol soluble extract content was 14 .66%. In the cinnamon bark simplicia sample, the water content was 9.32%, the total ash content was 3.21%, the acid insoluble ash content was 0.30%, the water soluble essence content was 9.18%, and the ethanol soluble essence content was 18.2%. In the starfruit sample, the water content was 9.32%, the total ash content was 5.44%, the acid insoluble ash content was 0.15%, the water soluble essence content was 27.08% and the ethanol soluble essence content was 31.34%. Conclusion: Cinnamon bark simplicia and starfruit meet the requirements for 5 quality characterization testing parameters. Meanwhile, the ginger sample only met the requirements for 4 test parameters, testing the total ash content of ginger simplicia did not meet the requirements.en_US
