Analisis Kualitatif Kandungan Formalin pada Tahu yang Beredar di Pasar Padang Bulan Medan

Abstract

Background: Formalin is a clear liquid, colorless, penetrating odor, vapor stimulates the mucous membranes of the nose and throat. Formalin is widely used as a disinfectant or preservative for corpses. But nowadays many traders use formalin as a food preservative, especially in tofu. For this reason, it is important to analyze formalin in food (tofu).

Objective: This study aimed to qualitatively analyze formalin in tofu samples sold in Padang Bulan Market, in Medan City. Method: Qualitative analysis of formalin in tofu was conducted by 2 test methods,

namely test method with potassium permanganate and test method with chromatropic

acid.

Results: The results showed that all tofu samples did not contain formalin. This was shown in the KMnO4 test that the samples retained the colour of KMnO4, while in the chromatropic acid test no purple colour was formed, so it can be concluded that the samples did not contain formalin..

Conclusion: The tested tofu samples do not contain formalin thus fulfilling the requirements set out in Permenkes RI No 033 of 2012.
