dc.description.abstract | Leather is the outermost layer of the body of livestock such as cattle, buffalo, goats that have potential economic and nutritional value. Soaking in betel lime is expected to produce the best quality of leather crackers. This study aims to determine the effect of soaking time, concentration and interaction using betel lime solution on the chemical properties of raw cowhide crackers. This research was conducted in July-August 2023 at the Research and Technology Laboratory, Faculty of Agriculture, Universitas Sumatera Utara and Jangek Sari Cracker Factory, Jl. Amal Luhur No. 62, Dwi Kora, Medan Helvetia District, Medan City, North Sumatra Province. The research design used was CRD (Completely Randomized Design) factorial, namely 3 treatments of soaking time (A1 = 18 hours, A2 = 24 hours, A3 = 36 hours), 3 treatments of betel lime solution concentration (B1 = 0,8%, B2 = 1%, B3 = 1,2%) with 3 replications. Parameters tested included moisture content, protein content, fat content and ash content.
The results showed that soaking time of 18 hours, 24 hours and 36 hours had a significant effect on moisture content, protein content, fat content and ash content while the concentration of betel lime 0,8%, 1% and 1,2% had a significant effect only on moisture content and ash content. However, there was no interaction on the chemical properties of raw cowhide crackers. The best results were obtained in the 18 hour soaking time treatment with a concentration of 0,8% betel lime solution. | en_US |
