dc.description.abstract | Background: Sugarcane juice is a very natural and sweet drink that has a chemical composition derived from sugar cane stalks which contain sugar water levels of up to 20%. The habit of people who like to store sugarcane juice in the refrigerator for some time, this affects the quality of the sugarcane juice. Quantitative methods are used to determine the number of microbes present in the samples during the storage period using the Total Plate Number (ALT) test method. Objective: This test aims to determine the number of microbes formed during the storage period of sugarcane juice Method: The effect of storage time on the total plate number in sugarcane juice drink samples was carried out in accordance with the provisions stated in SNI-19-2897-1992 using the plate count method using PCA (Plate Count Agar) media. Results: The results obtained for sample I with storage times of 0 hours, 18 hours and 24 hours respectively were 1.3 x 104; 1.7 x 104 ; and 1.9 x 104. Furthermore, in sample II with storage times of 0 hours, 18 hours and 24 hours, the average number of colonies was 1.2 x 104; 1.5 x 104 ; and 2 x 104. And in sample III with a storage time of 0 hours, 18 hours, 24 hours, the results were 2 x 104; 2.3 x 104 ; and 2.8 x 104. Conclusion: The Effect of Storage on Total Plate Numbers in Sugarcane Juice does not meet the requirements of SNI 7388: 2009, where the total plate number allowed for fruit juice contains a maximum of 1 x 104 colonies/ml. | en_US |
